Although coffee is the world's most popular drink, few people realize how complex it is to manufacture. In fact, the method used to process coffee resembles that used to produce wine or beer.

Coffee grows on sunny highlands, such as those of South America and Africa. Of the two types of coffee beans - robustas and arabicas -, arabicas are the richest in flavor and contain the least caffeine. Tocra uses only the finest arabica beans to process its coffees.

The raw material, generally called green coffee, is obtained by soaking the fruit in clear water to remove the skin and pulp. The green coffee is then roasted in huge perforated drums that rotate and tumble the beans in hot air. Temperature, moisture and roasting time are closely monitored to obtain a perfect roast. A dark roast brings out the beans' natural oil, which is rich in flavor and aroma. Surprisingly, the darker the roast, the lower the caffeine level.
